Celebrate our national holiday in grand style by making Gourmet Burgers with Sun-Dried Tomatoes! This delectable twist on an old classic will have your guests clamoring around the grill for seconds!
1 jar (7 ounces) oil-packed sun-dried tomatoes
3 medium onions, halved and thinly sliced
3 tbsp balsamic vinegar
1/2 cup finely chopped red onion
2 tbsp dried basil
2 tsp ground cumin
2 tsp ground chipotle pepper
1/2 tsp salt
1/4 tsp pepper
3 pounds lean ground beef (90% lean)
1 cup crumbled goat cheese
8 hamburger buns, split
Drain tomatoes. Set aside 1/3 cup of oil. In a large skillet, saute sliced onions in 3 tbsp of the oil until softened. Add vinegar. Reduce heat to medium-low. Cook, stirring occasionally for 30-40 minutes, or until deep golden brown.
At the same time, chop up the sun-dried tomatoes and transfer to a large bowl. Add the red onion, seasonings and remaining 7 tsp of the reserved oil. Crumble beef over mixture and mix thoroughly. Shape into 16 thin patties. Place 2 tbsp goat cheese on the center of 8 patties. Top with remaining patties, and press edges firmly to seal.
Using your Grill Pan, grill your burgers over medium heat for 5-7 minutes on each side, or until a cooking thermometer shows an internal temperature of 160°F and its juices run clear. Flip using the slotted turner from your 4-Piece Kitchen Tool Kit.
Place buns, cut side down, on grill until toasted, 1-2 minutes. Serve burgers on buns with onions and, if desired, mixed greens.
