Directions

- 16 oz elbow macaroni, cooked

- 1/3 cup all purpose flour
- 3 cups whole milk

- 4 cups sharp cheddar cheese, shredded
- 2 cups Gruyere cheese, shredded
- 1/2 cup Parmesan cheese shredded
- 1 1/2 cups panko crumbs
- 1/4 tsp smoked paprika (or regular paprika)
- salt and pepper to taste
Instructions
- Preheat oven to 350F. Combine shredded cheeses in a bowl and set aside.
- Cook the pasta until it is one minute shy of reaching al dente status, as according to the package instructions. Remove from heat, drain, and place in a large bowl.
- Drizzle pasta with olive oil and stir to coat pasta. Set aside to cool while preparing cheese sauce.
- Melt butter in a Berlinger Haus 9.4” Cast Iron Casserole Pot. Whisk in flour over medium heat, and continue until bubbly and golden, or about 1 minute.
- Gradually whisk in the milk and heavy cream until it is nice and smooth. Continue whisking; once bubbles appear on the surface, continue to cook and whisk for another 2 minutes. Add salt and pepper.
- Add two cups of shredded cheese and whisk until smooth. Add another two cups of shredded cheese and continue whisking until creamy and smooth. The sauce should be thick and slow to stir.
- Stir in the cooled pasta, and mix until the pasta is fully coated with the cheese sauce. Once combined, add the combination of shredded cheese.
- In a small bowl, combine panko crumbs, Parmesan cheese, melted butter and paprika. Sprinkle over the top.
- Bake for about 30 minutes, or until bubbly and golden brown. Serve immediately.
Easy Shakshuka
This simple and delicious traditional North African dish consists of poached eggs in a spicy tomato sauce cooked with onions, chili peppers and herbs. Ingredients
- 2 tablespoons olive oil
- 1 yellow onion, thinly sliced
- 2 tablespoons harissa
- 2 teaspoons tomato paste
- 2 red bell peppers, diced
- 4 cloves garlic, thinly sliced
- 1 teaspoon ground cumin
- 1 teaspoon smoked paprika
- ¾ teaspoon kosher salt
- 5 large ripe tomatoes, diced
- Freshly ground black pepper, to taste
- 4 large eggs
- 1 tablespoon fresh parsley, chopped
- 1 tablespoon fresh cilantro, chopped
- ½ cup labneh or greek yogurt
- Crusty bread, sliced, to serve
- Heat oil in a Berlinger Haus Cast Iron Tagine Pot over medium heat. Add the onions, harissa, tomato paste, peppers, garlic, cumin, paprika, and salt and stir to combine. Cook until peppers have softened, or about 8 minutes.
- Add tomatoes and bring to a low simmer. Cook until a thick sauce forms, or about 10 minutes. If shakshuka does not form a sauce-like consistency, add a little water. Add salt and pepper to taste.
- Use the back of a spoon or ladle to make four divots in the sauce. Crack each egg into its own divot. Simmer until whites are set, but yolks are still runny, or in about 8 to 10 minutes.
- Remove from heat and let rest for 5 minutes. Garnish with parsley and cilantro and serve with yogurt and bread.

How do you cook with a tagine pot?
Cooking with a tagine pot is a relatively simple process. Tagine pots use a slow-cooking process similar to Dutch ovens or cast iron casserole pots.
- Line the bottom. Create a cushion at the bottom of the tagine using vegetables like onions, celery, carrots, as well as cloves of garlic. This will help prevent the meat from burning and sticking to the bottom.

- Unglazed: This traditional format allows tagine pots to improve over time as spices steep into its porous material. For many North American households, the frying pan is the typical answer when it comes to naming the cookware it uses the most. Also known as a skillet or frypan, this reliable tool commonly ranks as one of the first purchases a new homeowner will make for their kitchen.

How does a wok differ from a frying pan?
The fundamental reason a wok is so different from a frypan has to do with their construction.
To begin, the base of a frypan is completely flat, and is surrounded by slanted walls (compared to a sauté pan that has vertical walls). Instead, a wok is able to cook food very quickly. Rather than heating up the entire surface of a flat-bottomed pan, this type of pan directs heat to the very bottom of its pan. This characteristic is the main concept behind stir frying—the cooking technique that requires constant stirring and flipping of ingredients to ensure an even cook.
Another characteristic that stands in direct contrast to the frypan is the Chinese pan’s ability to retain heat well. By incorporating its large lid as its upper barrier, a wok is able to establish an enclosed cooking area that consists of different heat zones: a conduction zone at the very bottom, a convection zone above it, and condensation zones that surround them both.

How has a wok changed for modern kitchens?

Round-bottoms woks are difficult to balance on a flat stovetop, and while this has largely been rectified by a ringed pan holder, this hasn’t solved its other problem. To solve both problems, modern woks have evolved to feature flat bottoms. This gives them the stability to stand on their own, and helps them achieve more contact with the stove. These changes have been complemented by other changes; these include switching its traditional material of carbon steel for aluminum and adding a non-stick coating, making it more practical and easier to use.
